This top-quality oil boasts the protected designation of origin Istria and is crafted from a handpicked blend of two olive varieties: Istarska bjelica (38%) and Leccino (62%). The Istarska bjelica is renowned for its high polyphenol content, enhancing its antioxidant properties, while the Leccino variety offers a fresh, fruity taste.

Our olives are harvested by hand and processed on the same day using Decanter Multi Fase technology, which preserves up to 30% more polyphenols in the oil. After natural decantation, the oil is stored in stainless steel barrels before bottling, ensuring its premium quality.

Our oil features a yellow-green color with a golden sheen and complex aromas including artichoke, chicory, sage, and rosemary, along with pleasant balsamic tones.
