The Coral Wine project is the first and only underwater wine cellar specialised in ageing wines under the sea surface. With eight years of experience and a yearly production of about 15.000 bottles from different winemakers, Coral Wine is also the biggest underwater ageing project in the world. Until today, they have tested over 500 labels from 150 different winemakers from 15 different European countries.
Wines are immersed at a depth between 15-30 meters in the clear Adriatic Sea near the island of Pag, Croatia. Being a coastal farm that grows mussels and oysters, the quality of the seawater at Coral Wine location is overseen weekly by the Croatian government, guaranteeing safe environment, sustainable harvesting and environmentally friendly production. The sea current, pressure and temperature under the water all benefit the maturing process, while the surrounding small corals, algea and other marine organisms stick to the bottles, making every bottle a unique artform. Wines are aged in these conditions for 250 -700 days, depending on the type of wine and the characteristics that want to be achieved for each wine. The underwater wine-maturing conditions of the sea soften the tannins and acidity, while preserving the authentic aromatic profile of each wine.
