Located in the Cotes de Bourg, Chateau Rouselle is a Bordeaux boutique winery that is focused on quality, rather than quantity. Practicing organic viticulture and winemaking, they produce elegant wines with a subtle kick - resulting in both food friendly and meditative wines. The vines in the vineyard are average 40 years old planted slopes of limestone covered by 30cm to 1m brown clay.

Vinification:

Cold maceration. Aged 6 months in French oak barrels (50% in new and 50% in used old barrels). One year underwater ageing in the Adriatic Sea at a 25m depth.

Wine Description:

Château Rouselle - Tradition 2019 is a classic Bordeaux blend, featuring Merlot, Cabernet Sauvignon, and Malbec. This wine is not only aged for 6 months in a careful selection of new and seasoned oak barrels but afterwards also spent an additional year submerged 25 meters deep in the Adriatic Sea, near the island of Pag. This unique “coral wine” aging method gives the wine a profound complexity, with the underwater environment subtly integrating the tannins, resulting in a velvety, smooth texture.

The bouquet opens with vibrant aromas of ripe cherries, juicy raspberries, and a touch of blackcurrant. As the wine evolves in the glass, more complex notes of liquorice, fresh mint, and warm spices come through, adding depth and intrigue. The underwater aging process enhances the wine's freshness, while the gentle currents and stable temperatures of the sea help refine its structure, creating a harmonious balance between acidity and tannins.

Pairing:

This vintage pairs beautifully with roasted meats, grilled vegetables, and rich cheeses, or it can be enjoyed on its own as a contemplative wine with a story.

The Coral Wine Croatia project exists for eight years and produces ±15 000 bottles per year. It's the first and only underwater wine cellar to age wine from different countries in the EU.

The constant temperature, the water pressure and the lack of oxygen influence the wine aromas and its structure. Ageing in the sea accelerates the ageing of the wine, particularly softening it's tannins and giving it rounded, complex aromas, different than when aged in the conventional wine cellar.
