Dalmatian dog is the 'younger brother' of Testament Babić. It's a fruity, medium-bodied wine with lively freshness and firm structure. It has dark ruby color and aromas of ripe red cherry and Dalmatian herbs. Aged only in stainless steal, Dalmatian dog is terroir-driven, vibrant and full of life. It’s maker, enologist Juraj Sladić succeeded to make an impressive babić without needing the wood.
This wine has just been awarded high 95 points at the Decanter World Wine Awards:
"Fine and subtle raspberry and damson nose. Attractive, fresh and concentrated palate packed full of black fruit, forrest floor character and soft tannins; very well made." - Decanter Wine World Awards 2020
Vinification:
The Babić grapes are grown at Testament Winery’s 47 hectare organic vineyard. The manual harvest took place middle of September. Fermentation with skin contact lasted 7 days. The wine has gone through spontaneous malolactic fermentation. Aged in stainless steel tanks in order to preserve fruit and freshness.
About Babic grape variety:
Babić is the local Dalmatian red grape variety, originating from the UNESCO-protected Bucavac vineyard only 10 km from Testament Winery. The Testament vineyard, planted 10 years ago, is located on hills sloping down towards the Adriatic Sea, providing a permanent breeze that is evident in the wines. The vines grow in harsh conditions – in limestone karst with less than 20% soil – thus committing themselves to producing premium grapes.
